Stephenson's Green Rice

This is a great side dish all year round, but a creatively colorful addition to anyone's holiday table.

What You'll Need...

  • 2QT casserole dish
  • Large bowl
  • Cheese grater
  • Cutting board

Ingredients

  • 3c cooked rice, cooled (jasmine or white)
  • 1c chopped Italian parsley
  • 1/2c grated sharp cheddar* (we prefer to shred block cheese vs buying pre-shredded)
  • 1/3c chopped white onion
  • 1/4c chopped green bell pepper
  • 1 clove garlic, minced
  • 1 can evaporated milk (12oz.)
  • 2 eggs beaten
  • 1/2c vegetable oil
  • 1T salt1
  • 1/2t pepper
  • 1 lemon - zest and juice Paprika for topping
  • Cooking spray

Directions

  1. Preheat oven to 350 ℉.
  2. Combine rice, parsley, cheese, onion, green pepper and garlic in a greased 2QT casserole dish.
  3. Blend together remaining ingredients and then add to the rice mixture.
  4. Sprinkle the top with paprika, and bake for 45 minutes until rice is almost custard-like.
